I want to update my MI5 Pro to android 7.0

I have twrp-3.0.2-0

As i can see at first post:

How to update MI5 to Android 7.0 from Android 6.0:
- Install LATEST Android 6.0 release for MI5 6.11.10
- Install TWRP 3.0.2.3 or ZCX
- Reboot to new TWRP
- Install Android 7.0 release
- Reboot - Never wipe /system partition manually!
- Done
- In case of any issues, make factory reset via system settings
- For ROOT on Android 7.0 install SuperSU 2.79


Can i update to TWRP twrp-3.1.0-1-gemini.img instead of twrp-3.0.2-3-gemini.img ?

I think the answer is yes, haven`t tried it though
It doesn't really matter if you update on 3.0.2-3 as latest weekly rom flashes twrp 3.1

In my MI5 is happening the same. The apps are always working in background even when i force the close of all apps.

Have you tried to disable "Start in background" for those apps?
These settings are in "Other permissions">"Permissions" tab, scroll to the bottom and disable every app but those you need
