Frequency bands have nothing to do with the ROM. See the official specs for your device, Chinese specs if your device is imported from China, Global specs otherwise.

I bought the Poco F6 a few days ago and since I've been using Xiaomi devices for over 9 years, I unlocked the bootloader straight away.

My question at this point is whether it would be better to flash "xiaomi.eu_PERIDOT_OS2.0.4.0.VNPCNXM_15" because of the "Wi-Fi Battery Drain Bug" in the latest version, or should I rather flash the current "xiaomi.eu_PERIDOT_OS2.0.6.0.VNPCNXM_15" despite the bug?

No, you can't, you have to use the fastboot update.
