Here's an Edify script snippet that completely removes the preloaded GApps from Xiaomi.eu ROM on a Note Pro (leo). Feel free to adapt to your needs and reuse it to make your own

The two files commented out are also present on stock China ROMs, so I'd keep them unless you're planning to install another version of GApps. Removing CloudPrint will cause the
Additional settings to force-close on recent ROMs. If you really want to get rid of it, you can replace
Settings.apk from 6.4.7.
As an aside, in my view the developers have made the right decision to include GApps by default.
