Just wanted to check I hadn't missed something - Has Xiaomi not released anything beyond v14.0.13.0, released in December for the 11 Ultra?

Actually there is NO(!) hyperos rom, not in developer or stable version.
 
It is official CN rom , Android 14.

Yes, it's an version for Mi 11 Pro/Ultra. The first letter indicates the android version.
TKACNXM = android 13
UKACNXM = android 14

I installed first the Chinese Rom. It's full of Chinese apps, I like the rom but Google pay doesn't work, my galaxy watch doesn't connect, default play store is getapps.

Edited: thank you gogocar62 I finnaly have the Rom I wanted and everything goes perfectly.

Need a new twrp or can i flash the hyper os rom normaly over the xiaomi 140130 TKACNXM Stable ???
 
You can install it as an update. I won't answer your second question, I don't have this device.
