First you would need an unlocked bootloader, to be able to install ROMs other than the original China ROM. If your phone was not already unlocked in China, it seems very complicated nowadays.
Second, for now, there is no EU ROM available for your device currently, you will need to wait to see if it is released in the future.

Same here, i just bought new Redmi note 14 pro. and i want to switch to other ROM global. Is it possible for me to do that ?

@bernandesdaniel I don't really have more information than what I provided.
First, it seems that the phone is not released globally, so you would need to wait until a global ROM is available.
Until then, the hard part is to get your phone bootloader unlocked. Basically, you can't officially unlock China devices if you are not Chinese, so you would have to pay unofficial services, with all the risks implied.
