Nob on Miui EU

Hi everyone. I am new to the forum, thanks for accepting me. I just got a Redmi Note 9 Pro Joyeuse. At the moment, I'm with Miui as standard. I thought about installing the EU rom a bit later. As I see that it is relatively new, I think I will wait until it is a little more shot. There isn't even a modified recovery yet. Is the performance difference from Miui global Eu to Miui Eu much?
What I need most is the payment by Google Pay. Does it work fine on these roms?

Another nob question:
The EU rom is made from the Chinese version and improved, but where does the rom for the Redmi Note 9 Pro Joyeuse come from if this device is not sold in China? Made from the global version? Thanks and regards.

EU weekly is china DEV for chinese phone model.
EU Stable is Global/stable from china or other area upon EU dev choice.
EU weekly every week.
EU stable as soon a central version exit.
