You "haven't enabled gestures"? Really? Then where is your navigation bar?
Anyways, when full-screen gestures are enabled in "Full screen display", the Google Assistant gesture is also enabled.
Xiaomi did not provide any other way to disable that gesture besides disabling full-screen gestures, but it's not a bug.
