No gapps ROM how to.

Hi forum members. I have Mi mix2 with 12.0.1.0 rom installed. I do not need gapps. Is there any way to remove them?
Possible option I am thinking about
1. Modify ROM before installing it
2. Remove gapps on the installed ROM
3. Do not include gapps while building ROM

Can anyone give me an advise what can be done? Internet is full with manuals how to install gapps but I am looking how to get rid of it completely.

If you want to completely degoogle the device, then forget MIUI. Try lineageOS for microG

Thank, I am already using lineageos. Chines versions has no any GAPPS installed but it has a lot of irrelevant applications. Is there any way to re-pack zip file myself after deleting unnecessary apps ? I was able to do so with Lenovo devices on MTK chip but I do not remember the software I used to do so.

For a complete degoogled experience I using crDroid v6.8 + MicroG installed by f-droid. I love this setup (waiting crDrood 7.1 based on "android R" )
