How To Get Stable Eu Rom + Dutch Language?

Hello meh bought a xiaomi mi5s 3gb/64gb from Banggood. Now I can't change the language to Dutch since it isn't available. I'm also stuck on android 6 instead of android 7. Can someone help me how to remove Banggood their Rom and install EU? I know it had been asked a dozen times but I wanna make sure I won't brick my phone or whatsoever. Can I keep my pictures and apps or should I backup everything?
