Difference Hermes V7.2.1.0 And V7.2.3.0

does anyone know the difference between
xiaomi.eu_multi_hermes_V7.2.1.0
and
xiaomi.eu_multi_hermes_V7.2.3.0?

Should I install it?

Why not?! Latest is always better and you don't need to do any wipes...

You're right on that "should"...
I know that 7.2.2.0 had some weird bugs and was even pulled from Xiaomi.
Now,I personally use Multirom Stable 7.2.3.0..
If you flash you will not notice anything new or groundbreaking imo..but I think it's good to be on tbe latest firmware..
