Ignore this, it was a magisk module making it not work. Disabled them all, rebooted and it worked immediately. Not sure which module but it was definitely that.

So far, just about every app is crashing including logging apps. I will generate a log over adb when I get back from taking the kids to school but I'm thinking it's play services at the minute. I can't clear cache and data from play services, the device hangs and has to be rebooted. Dirty flash...
