No problem at all with this TWRP. This is the new method to sideload TWRP to new phone because of few Android 11 restriction. Cheers

Yeah, I'm thinking mostly the bricked Mi 11 Pro/Ultra we seen in this forum are because its not changing the active slot to "a". But, on Mi 11 the process are done by automatically and seamlessly.

I'm curious, do I still need to change the "fastboot getvar current-slot" to slot a. In order to sucessfully flash EU ROM on Mi 11 Pro/Ultra?

Yup, just wipe and flash the stable rom as easy as that. I'm also using stable cuz the bugs as not as obvious on the weekly rom. But the important part is the battery life is much better compared to weekly rom. Hopes this answer your question.

IMO, stable build on Mi 11 have better battery life than weekly.

I've just flashed from CN stable 12.5.4.0 to EU ROM weekly 21.4.21 on Mi 11 "venus" with no problem at all.

My device is Mi 11 CN SET. I've been flashing EU ROM from weekly to stable, CN ROM to GLOBAL to EEA ROM and back to EU ROM. Currently using stable CN ROM, I can tell you there's no problem with Mi 11. I think only the PRO/ULTRA variant is problem for right now and also IMO I'm thinking sharing...
